Roasted Asparagus with Aged Cheddar

Roasted asparagus with aged cheddar: fast, local, delicious, and great with meat on the grill or on its own. Asparagus is currently grown locally and available at YYC farmers markets and here I used our aged cheddar.

Roasted asparagus with cheddar

1) Preheat oven to 400F and blanch your bunch of asparagus 90sec if it’s big & tough. Put on parchment paper on a cookie sheet with cut ends in the middle.

2)Melt 2 TBSP butter in saucepan over medium heat, and whisk in 1/3 cup flour (skip the flour if you want gluten free–it just doesn’t get as thick and you need to simmer a bit longer–I prefer gluten free personally!)

3) Lower heat; whisk in 2 cups milk until smooth, then simmer till thick.

4) Remove from heat and stir in an egg yolk (optional); add spices (like salt & pepper or something spicier Pour over asparagus and top with 2 cups grated aged cheddar.

5) Bake 8-10 mins, then broil a couple mins until bubbly and golden. Serve & eat asap!
