Mozzarella” comes from the Italian verb mozzare. That means to cut by hand. You see, with fresh mozzarella, we separate the cheese curd into small balls. First you sweep your hands through the mix. Then you pull and twist the soft cheese. So that’s how we get these awesome balls of fresh cheese!
Fresh mozzarella has lots of nice names because it tastes amazing. Queen of Mediterranean cuisine. “Pearl of the table. White gold. Flower of milk. That’s the name fior di latte, for the largest balls of fresh mozzarella in our store.
In the past mozzarella was made from buffalo milk. Now, you might be wondering what kind of buffalo live in Italy. This was my first question. Because my family is from Molise pastureland and I can’t remember anyone ever talking about herding buffalo or wild buffalo.
Well, the Italian Mediterranean Buffalo is an Italian breed of water buffalo. There’s similar kinds of buffalo in Romania. Also in Hungary and the Balkans. Buffalo historians think the Italian water buffalo came to Italy in Roman times. Romans brought these buffalo from the middle East. But, they’re not 100% sure!
Now, lots of fresh mozzarella is made from cow milk.
